BUT I LIKE BEING A CARNIVORE!


First, I'd like to celebrate my recent success with you, my cyberfriends. With all the straining, pushing, stretching, and grunting that I like to call exercise, I've now lost 13 pounds. Woot woot!


Now for the hard part: a little over a week ago I went for my annual and discussed the results of my blood test with my doc. I have high cholesterol and she strongly recommended that, in order to avoid going on meds, I go on a vegan diet.


THAT MEANS MEATLESS!!!!

This was not good news for this meat and cheese loving chick!


So I've been experimenting with different vinegars and herbs for flavor (even though we all know cheese and butter are what really make a meal.) Here's a picture of my lunch, a flavorful combination of bell peppers, onions, walnuts, rosemary, and garlic sauteed in olive oil and doused with red wine vinegar. Yes, it's a tortilla you see for a wrap, but oh well.


Needless to say, I haven't been strict with myself, but I have taken the doctor's recommendations seriously.

Care to share your favorite veggie recipe? Tip? Trick? If nothing else, I need a pep talk!

Oh, this doesn't sound fun. Sorry to hear this, Georgiana. I do have a great vege chili recipe that I quite enjoy. I'll try and look it up and send it to you. It's very filling.

As a fellow meat lover I feel bummed for you. Oh my goodness, life without meat--may it never be! But, then again, a healthy life is a big reason to try to make the switch. This is a tricky one indeed.

Erica, take heart. There is good food out there. From time to time I go close to vegan due to a chronic immune disease I have.

Here's my favorite. (I do saute it in olive oil. Not sure how that works for your doctor.)

Before you read the ingredients--I used to think I hated (think gags)these vegetables. Then I tried this at a Mother's Day dinner--fabulous!

Cut up a head or two of broccoli, an onion (bite size pieces), yellow summer squash, zucchini, red pepper (any will do, but red gives it some color and heat), and baby carrots if you like.

Saute however much you want until tender crisp. Season as you like--I use salt-free lemon pepper and some season salt. Tastes great, is healthy, and is very filling.

The cool thing is that I chop all those vegetables at once, store them in a bag in the fridge, then when I want them, they're all ready to cook. I'm eating in about ten minutes.

I hated going vegan after my diagnosis, but I've noticed that whenever I eat mostly veggies, I feel AMAZING!! I've told my mom and my husband that I feel like a teenager again. It's made me understand that what we eat has a huge effect on us.

That being said, I did have a brownie tonight.

Okay, two.

And a half. :)

When I want something fast, I like Morningstar original sausage patties and some of their veggie burgers. I ate them almost every day for almost two years and ODed on them, but they're good for lunch or breakfast when you want to eat in 40 or 90 seconds.

Thanks for the support, ladies! It's a transition, to be sure, but it'll be worth it if I don't have to go on medication. Of course, I may whine from time to time, so the support must be ongling, LOL!
